A wet filling leaves these biscuits doughy. The grated apple has to be cooked in a pan with sugar and cinnamon until all its liquid has gone. Wait until there is no liquid left in the pan.

Method
-
Cook the filling
Cook the grated apple in butter with the sugar and cinnamon for 15 minutes, until the liquid has gone COMPLETELY. Stir in the walnuts and cool.
-
Make the dough
Beat the butter, icing sugar and egg yolk. Add the flour, baking powder and vanilla and bring together.
-
Rest
Leave for 15 minutes.
-
Fill
Take walnut-sized pieces of dough, open them in your palm, add filling, close and form an oval.
-
Bake
Arrange on a tray and bake at 180 degrees for 25 minutes, until the bases colour.
-
Coat in sugar
Roll in icing sugar while warm.
Tips
- Drive off all the liquid from the apple; a wet filling leaves the biscuit doughy inside.
- Press the seal firmly, as a biscuit that opens spills its filling onto the tray.
- Be generous with the cinnamon, as it is the spice that carries the apple.
