The biggest risk with a whole baked fish is the underside sticking to the tray and drying out. Build a bed of vegetables and the fish never touches the tray, hot air circulates underneath it, and it cooks evenly all over.
Ingredients
For the fish
For the bed of vegetables
Method
-
Heat the oven
Heat the oven to 200 degrees.
-
Build the bed
Spread the potato, onion and tomato slices in the tray, drizzle with olive oil and scatter with oregano.
-
Pre-bake
Give the vegetables 15 minutes in the oven; potato takes longer than fish.
-
Prepare the fish
Cut three slashes in each side of the sea bass and rub with olive oil, salt and pepper. Put lemon slices and bay in the cavity.
-
Set them on top
Sit the fish on the bed of vegetables.
-
Bake
Bake for 15 minutes. A knife into the back should part the flesh easily.
Tips
- The slashes are not only for looks; they let the heat into the flesh and even out the cooking time.
- Do not give the fish more than fifteen minutes; sea bass dries out easily.
- Without pre-baking the vegetables, the potato will still be raw when the fish is ready.
