Blackberry is one of the most delicate fruits; twenty minutes and it has broken down completely. That makes resting it in sugar even more important here, and the boil short. If the seeds bother you, sieve half the jam and stir it back in.
Ingredients
For the jam
For jarring
Method
-
Rest them in sugar
Mix the blackberries gently with the sugar and leave for 8 hours.
-
Bring to the boil
Tip into a pan, bring to the boil and lift off the foam.
-
Keep it short
Boil for 20 minutes only. Do not stir it, shake the pan.
-
Reduce the seeds
If you like, push half the jam through a sieve and stir the puree back into the pan, discarding the seeds.
-
Add the lemon
Add the lemon juice, boil for another 3 minutes and test the set.
-
Fill the jars
Fill the jars while hot, turn them upside down and leave to cool.
Tips
- Do not boil it for more than twenty minutes, as the blackberries break down completely.
- Do not stir it, shake the pan. A spoon crushes the fruit.
- Frozen blackberries work too; mix them with the sugar without thawing them.
