The only reason a green salad comes out watery is that the washed leaves were not dried. The dressing is oil based; it will not cling to a wet leaf and runs to the bottom of the bowl. Without a salad spinner, spreading them on a clean cloth and shaking is enough.

Method

  1. Wash the leaves

Wash the lettuce and rocket in plenty of water.

  2. Dry them

Dry them thoroughly in a spinner, or spread them on a clean cloth and shake. This step is essential.

  3. Prepare the vegetables

Cut the cucumber, tomato, carrot and onion.

  4. Whisk the dressing

Shake the olive oil, lemon juice, mustard, salt and black pepper together in a jar into an emulsion.

  5. Toss

Pour the dressing on at the table and toss lightly with your hands or two spoons.

Tips

  • Do not skip drying the leaves; a wet leaf will not hold the dressing.
  • The mustard is not only for flavour; it is the emulsifier that stops the oil and lemon separating.
  • Dress it at the table, as leaves left standing collapse.
