Dried fruit must not go into the oven with granola: twenty minutes and it is charred. It gets stirred in once the tray comes out. The other rule is not to stir the mixture while it bakes; left alone, granola sets into clusters, and those clusters are the part everybody likes best.

Method
-
Heat the oven
Heat the oven to 150 degrees.
-
Mix the dry ingredients
Mix the oats, nuts, seeds, cinnamon and salt in a bowl.
-
Add the wet ingredients
Add the honey, oil and vanilla and mix so that every piece is coated.
-
Spread on a tray
Spread in a thin layer on a lined baking tray and press it down.
-
Toast it
Bake for 35 minutes. DO NOT STIR IT; that is how the clusters form.
-
Cool it
Leave it to cool completely on the tray. It crisps up as it cools.
-
Add the fruit
Stir in the raisins and apricots and transfer to an airtight jar. It keeps for 3 weeks.
Tips
- Do not put the dried fruit in the oven, as it burns and turns bitter.
- Do not stir it in the oven; the clusters are the part everybody likes best.
- Do not jar it before it has cooled completely, as the steam softens the granola.
