In porridge the ratio is everything: one part oats to two parts liquid. Less liquid and the porridge sets like stone; more and it is soup. Cooking it for longer than five minutes also breaks the oats down completely.

Method
-
Heat the milk
Bring the milk and salt to the boil in a pan.
-
Add the oats
Add the oats, stir, and turn the heat down.
-
Cook
Cook for 5 minutes, stirring from time to time. The oats will swell and the milk thicken.
-
Sweeten
Take it off the heat and stir in the honey and cinnamon.
-
Top it
Divide between bowls and add the banana, walnuts and raisins.
Tips
- Do not cook it for more than five minutes, as the oats break down completely.
- Add the honey after taking the pan off the heat; boiled honey tastes different.
- It thickens as it cools, so leave it slightly loose in the pan.
