No water is used in this dessert. Leave the pumpkin with sugar overnight and it gives up its own liquid and cooks in that. Pumpkin with water added boils, falls apart and never candies. A recipe that needs patience but is otherwise easy.

Method
-
Sugar the pumpkin
Lay the pumpkin slices in a wide container in layers, scattering sugar between each.
-
Leave it
Cover and chill for 8 hours or overnight. The pumpkin will release its liquid.
-
Into the pan
Tip the pumpkin into the pan with its liquid. ADD NO WATER.
-
Add the spices
Add the cloves and the cinnamon stick.
-
Cook
Cook covered over a low heat for 35 minutes. Do not stir, shake the pan.
-
Thicken the syrup
Take the lid off and boil for 10 minutes more.
-
Cool
Cool in the pan and add walnuts, tahini and coconut before serving.
Tips
- Add no water. The pumpkin provides enough of its own; added water makes it collapse.
- Do not stir, shake the pan to keep the slices whole.
- The tahini is not just decoration here; it is what balances the sweetness.
