A shepherd’s salad goes watery for two reasons: cutting it fine and salting it early. Vegetables cut large release less liquid, and salt added only at the table releases none at all. Add the dressing at the table too.

Method

  1. Cut the vegetables

Cut the tomato, cucumber, onion and pepper into 1.5 centimetre cubes. Do not cut them fine.

  2. Drain the tomato

Once the tomatoes are cut, leave them in a sieve for 5 minutes and throw away the liquid.

  3. Mix

Toss the vegetables and parsley together in a wide bowl.

  4. Dress

At the table, add the olive oil, lemon juice, salt and black pepper and toss.

Tips

  • Salt it at the table; a salad salted early goes watery within ten minutes.
  • Drain the tomato, and nothing pools at the bottom of the bowl.
  • Salting the onion, rubbing it and rinsing it takes the sharpness out, and then children will eat it too.
