Trileçe takes its name from the three milks: milk, cream and condensed milk. The sponge has to take the whole mixture up, and for that its surface must be pricked with a fork. On an unpricked sponge the milk pools on top while the bottom stays dry.
Ingredients
For the cake
For the milk mixture
For the caramel
Method
-
Make the sponge
Beat the eggs and sugar for 8 minutes, until pale. Sift in the flour, baking powder and vanilla and fold.
-
Bake
Pour into a buttered dish and bake at 170 degrees for 30 minutes.
-
Prick
Once the sponge is warm, prick the surface all over with a fork. This step lets the milk sink in.
-
Mix the milks
Whisk the three milks together.
-
Soak
Pour the mixture over the sponge a little at a time, waiting for it to be absorbed each time.
-
Chill
Chill for 3 hours.
-
Make the caramel
Melt the sugar in a dry pan, take it off the heat when it browns, carefully add the cream and stir, then melt in the butter.
-
Pour it over
Once the caramel has cooled a little, pour it over the cake and chill for another hour.
Tips
- Do not skip pricking the sponge; an unpricked one will not take up the milk and it pools on top.
- Do not pour the milk in one go, add it as the sponge absorbs it.
- Do not pour the caramel on hot; hot caramel melts the surface of the cake.
