The oil in tinned tuna weighs the salad down and smothers the taste of the olive oil. Leave it in a sieve for five minutes to drain, then add your own olive oil. The difference is obvious.
Ingredients

For the sauce
Method
-
Drain the tuna
Leave the tuna in a sieve for 5 minutes to drain off its oil.
-
Prepare the leaves
Wash the lettuce, dry it thoroughly and tear it into large pieces.
-
Cut the vegetables
Slice the tomato, cucumber and onion.
-
Whisk the dressing
Whisk the olive oil, lemon juice, mustard, salt and black pepper.
-
Build the plate
Spread the lettuce on the plate and arrange the vegetables, sweetcorn, olives and tuna on top.
-
Finish
Add the slices of egg and drizzle the dressing over.
Tips
- Drain the oil from the tuna, as the tinning oil smothers the taste of the olive oil.
- Dry the lettuce thoroughly, because a wet leaf will not hold the dressing.
- Dress it at the table, as a salad left standing collapses.
