Türlü is not a matter of throwing everything in the pan and waiting. Potato and carrot want forty minutes while courgette collapses in fifteen. Put the vegetables in according to how long they take and each one comes out right, and that is the only thing separating türlü from a pan of vegetable mush.

Method
-
Fry the meat
If you are using meat, cook it in olive oil for 12 minutes until it takes its liquid back up.
-
Add the onion and paste
Soften the onion for 5 minutes, add the tomato paste and grated tomato and cook for 5 minutes.
-
Add the firm vegetables
Add the potato, carrot and beans, pour in the hot water and cook for 20 minutes.
-
Add the aubergine
Add the aubergine and cook for 10 minutes more.
-
Add the courgette and pepper
Add the courgette and pepper last and cook for 10 minutes. Salt at this stage.
-
Rest
Take the pan off the heat and leave it covered for 10 minutes.
Tips
- Putting everything in at once is the most common mistake; the result is a pan with dissolved courgette and raw potato.
- For an oven türlü, use the same order on the tray: the firm vegetables go in 20 minutes earlier.
- Shake the pan instead of stirring and the vegetables stay whole.
