Lor is a bland cheese on its own, and what saves it is plenty of herbs and olive oil. Spring onion and dill are not optional. If the lor is wet, leave it in a sieve for ten minutes.

Method
-
Drain the lor
If the lor is wet, leave it in a sieve for 10 minutes.
-
Prepare the herbs
Finely chop the spring onion, dill and parsley.
-
Mix
Combine the lor and the herbs in a bowl.
-
Dress it
Add the olive oil, lemon juice, salt and chilli flakes and mix. Adjust the salt to how salty the lor is.
-
Serve
Serve with slices of tomato and fresh bread.
Tips
- Be generous with the herbs; lor has no flavour on its own and the herbs carry it.
- Taste the lor to judge its saltiness, as it varies a great deal between brands.
- A spoon of strained yoghurt makes the texture creamier.
