Fresh bread falls apart in the egg, while stale bread soaks it up and keeps its structure. That is exactly why this recipe exists as a way of using bread up. Do not leave the bread sitting in the egg; two seconds a side is enough.

Method

  1. Make the mixture

Whisk the eggs, milk, salt and black pepper in a wide bowl.

  2. Dip the bread

Dip each slice for 2 seconds a side. Do not leave it longer or it breaks up.

  3. Melt the butter

Melt the butter in a pan over a medium heat.

  4. Fry

Fry the slices for 2 minutes a side, until golden.

  5. Finish

For a savoury version scatter with kaşar in the last minute; for a sweet one serve with icing sugar.

Tips

  • Do not use fresh bread, as it falls apart in the egg.
  • Do not soak it; two seconds a side is enough.
  • For a sweet version put a spoon of sugar and some cinnamon in the mixture instead of salt.
