Gavurdağı is the opposite of a shepherd’s salad: here everything is cut very fine, almost to the consistency of a paste. Walnuts and pomegranate molasses are the distinguishing ingredients. Leave the molasses until last, because added early it draws the liquid out of the vegetables.

Method

  1. Cut fine

Cut all the vegetables into half centimetre cubes, as fine as you can.

  2. Drain the tomato

Leave the tomatoes in a sieve for 5 minutes.

  3. Mix

Toss the vegetables and parsley together.

  4. Add the walnuts

Stir in the walnuts close to serving so they keep their crunch.

  5. Dress

Add the olive oil, pomegranate molasses, salt and pepper flakes and toss.

Tips

  • The fine dice is the identity of this salad; cut large it becomes a shepherd’s salad.
  • Add the walnuts close to serving, as added early they go soft.
  • Pomegranate molasses varies in sharpness between brands, so add it to taste.
