Paçanga böreği was born as a meyhane meze and its ingredients are fixed: pastırma, kaşar cheese, charred pepper. Slice the pastırma thin and do not use too much; çemen is a strong flavour and one slice is enough for one roll.

Method

  1. Cut the pastry

Cut each sheet into 6 triangles.

  2. Lay out the filling

Along the wide edge of each triangle put pastırma, cheese, charred pepper and tomato.

  3. Roll

Fold the sides in and roll up tightly.

  4. Seal

Close the end with flour paste.

  5. Fry

Turn in hot oil for 3 minutes, until golden all over.

  6. Drain

Transfer to kitchen paper and serve hot.

Tips

  • Deseed the tomato; its liquid wets the pastry from inside and the roll falls apart.
  • Do not use too much pastırma, or the çemen dominates and smothers the cheese.
  • Serve hot; as the cheese cools it hardens and the roll turns heavy.
